Daikon salad

Daikon is one of root vegetables very popular in the south east asian cuisine. These radishes have a milder taste yet are crisp with a hint of spiciness to them.
Daikon is highly valued as a low calorie vegetable with high amounts of phyto nutrients. Eaten fresh or cooked it so quite a tasty vegetable.

Here  us the easiest ever..fresh recipe  with a super food of the southeast...

You need

Half a  large daikon
One medium tomato
Half an English cucumber
Juice of half a lemon
Salt to taste
Cilantro leaves to garnish
A tbsp of crushed roasted  peanuts

Method

Peel and grate the daikon.
Finely chop the cucumber and tomato
Add all this to the mixing bowl. Add lemon juice, salt and mix well set aside to chill.
While serving, garnish with coriander leaves and peanuts crushed.
Enjoy your lovely salad, don't worry about the calories.

Psst... you can add croutons too.
