Lactation Cookies v.2: Gluten-Free Chocolate Coconut Mounds

A couple of years ago a friend of mine had a baby and I whipped up a batch of Lactation Cookies for her. She just had Baby v.2; so I decided to make Lactation Cookies v.2. Just delivered them this evening. Hope she likes them.

"Mom, may I try a cookie?"

They're lactation cookies.

"What's lactation?"

Lactation is how moms feed their babies milk.

"Wait...what do the cookies do?"

They help moms produce more milk for the baby...at least that's the theory. Do you want to try one?

"No, I don't want to lactate."

Okay, more for her.


Ingredients

  • 1 1/2 C flour (I used a gluten-free flour)
  • 2 C rolled oats
  • 1 t baking soda
  • 3/4 C almond butter
  • 1/2 C butter, softened
  • 1 C ground flax seed
  • 3 T brewer’s yeast
  • 1/3 C warm water
  • 1 t cinnamon
  • 1 C organic granulated sugar
  • 2 t pure vanilla extact
  • 1 T unsweetened cocoa powder
  • 2 large eggs
  • 1 C semi-sweet chocolate chips
  • 1 C dried coconut shreds


Procedure
Preheat oven to 350 degrees F. Combine flour, oats, baking soda, and cinnamon in a bowl. In a large mixing bowl, beat almond butter, butter, sugar, vanilla, brewer’s yeast, flax seed and water until creamy. Mix in eggs. Gradually beat in flour mixture. Stir in coconut and chocolate chips.

Place heaping tablespoon-sized balls of dough onto greased baking sheets or baking stones. Bake 12-14 minutes. Cool completely on wire racks.
